The Sana’ani Kebab, or what is known in Sana’a as “Qanam”, is one of the unique morning dishes of Sana’a where it is served with a plate of “Sahaweq” (tomato sauce with chili pepper, spices and salt) and “Kudam” (a kind of bread).
“Qanam” is very similar to kebab, but it has a different technique of preparation.
What motivated me to take the picture is not the kabab itself, but the way it is being cooked, especially, the way of setting the fire that takes a lot of time and effort. This traditional way is used nowadays due to the power outages in the capital Sana’a.
